- Review and discuss the practice session - Occasion 1. (Use photos taken as reminders of presentation and serving sizes.)
- Read and respond to the feedback from your tutor and peers.
- Note any improvements, amendments, yields etc. so recipes can be improved, amended and made more accurate.
- Adjust standard recipe cards.
- Adjust workplan / mise en place lists.
- Re-calculate food costs per portion for the sub-recipes and the complete menu dish.
- Research improved presentation.
- Edit menu card if necessary.
- Print out new versions of work plans.
- Clean and organise the kitchen.
- Carry out a stocktake and produce a new order sheet for Occasion 2.
Self-Directed Learning
- Replace recipes for task 3 with amended versions resulting from feedback for Occasion 1.
