Welcome, and congratulations for choosing to study our Diploma in Hospitality Management (Level 6) programme. This is a practical programme of study which integrates food and beverage service and production and tourism to provide you with realistic experiences of the hospitality industry in terms of working with a team, managing relationships, problem solving, thinking creatively and applying your knowledge and skills.

During your time on this programme, you will be supported by your tutor and classmates and will be encouraged to self-manage your learning and develop your leadership skills to increase your employment opportunities to work as a manager.

Sub Topics

The programme is divided into five courses or modules. Courses 1-4 are delivered over the first 21 weeks with Course 5 being the second 19 weeks, which will be your work placement.

GPOs (Graduate Profile Outcomes)

By the end of the course you will be able to:

  1. Manage and develop hospitality staff to ensure positive customer experiences.
  2. Select and apply a range of communication, consultation, negotiating and reporting strategies to facilitate positive staff relationships in hospitality management situations.
  3. Analyse and apply financial management techniques to attain productivity, yield, and profitability requirements for a hospitality operation.
  4. Select and apply a range of strategic solutions, in response to changes in the hospitality business environment, in order to maintain or improve hospitality business performance.
  5. Plan and develop future business strategies that encompass financial management, product development, sales and marketing, and continuous improvement processes in a hospitality environment

Learning and Delivery Style

The programme is delivered as a blended course, which means that your time will be split between online learning through the EDDY LMS (learning management system) and on campus class time. The theory components you need to cover will be presented through EDDY, which will also give you activities, exercises and discussion forums for you to participate in. In addition to the EDDY platform and class time, you are also required to spend 18 hours per week in self-directed leaning (SDL). Your learning will be supported by your tutor and you are encouraged to engage with them and with your classmates to further your understanding and knowledge of the topics.

Course 1 is “Hospitality Business Performance” and explores the factors which allow you, as a manager working in a hospitality business, to formulate strategic plans for business growth. Before launching into that content, we will spend some time discovering the many different components which comprise the hospitality itself. Hospitality is a massive industry worldwide and is estimated to be worth around $6.8 billion to New Zealand’s economy, employing more than 137,000 people in 2021 (Hospitality New Zealand, n.d.). By the end of this course you will be able to analyse the hospitality environment and formulate strategic plans.
