Both groups will have a mise en place/prep day today, preparing a minimum of 12 portions of each dish.

Feedback will be provided by tutor and peers, with the feedback forms kept for recipe improvements during class.

Self-Directed Learning

Complete draft version of written assessment tasks 1-5.

Cook and Serve Day

Group 1 cooks and presents their dishes during this session, with Group 2 helping to clean up and providing feedback. 

Self-Directed Learning

Group 1 – Complete OneNote self-reflection C12.1 Occasion/Menu.

Group 2 – Complete written feedback on at least one dish presented (each learner with feedback on a different dish) – ready for classroom menu review.

Checklist

  • Review and discuss the practice session - Occasion 1. (Use photos taken as reminders of presentation and serving sizes.)
  • Read and respond to the feedback from your tutor and peers.
  • Note any improvements, amendments, yields etc. so recipes can be improved, amended and made more accurate.
  • Adjust standard recipe cards.
  • Adjust workplan / mise en place lists.
  • Re-calculate food costs per portion for the sub-recipes and the complete menu dish.
  • Research improved presentation.
  • Edit menu card if necessary.
  • Print out new versions of work plans.
  • Clean and organise the kitchen. 
  • Carry out a stocktake and produce a new order sheet for Occasion 2.

Self-Directed Learning 

  • Replace recipes for task 3 with amended versions resulting from feedback for Occasion 1.
  • Recalculate food cost and selling price.
  • Submit to checkpoint 2  - should now have tasks 1-5 completed

Formative assessment - Checkpoint- Tasks 3-5

In groups continue with recipe improvements, work plan improvements, updated costings etc. in response to the feedback from Occasion 1.

Self-Directed Learning

Watch Great British Menu episode  - top UK chefs cooking innovative food to a specific brief.  This episode is the final banquet service occasion.
