Both groups will have a mise en place/prep day today in the campus restaurant, preparing a minimum of 20 covers.

Self-Directed Learning

Written assessment – continue working on any FERs as directed by tutor.

Cook and Serve Day

Group 1 cooks and presents their dishes during this session, with Group 2 helping with clean-up and organisation

Self-Directed Learning

Group 1 – Complete OneNote self-reflection journal C12.3 Occasion/Menu

Group 2 – Complete written feedback on at least one dish presented (each learner with feedback on a different dish) – ready for classroom menu review.

  • Debrief of Occasion 3 service.
  • Finish kitchen clean-up if necessary and return unused dry goods to stores.
  • Feedback from tutor on written assessment – work on FERs.

Summative – OneNote self-reflection journal for Occasion 3.

Self-Directed Learning

  • All learners to have completed all OneNote reflection journals for all 3 menu occasions.
  • Complete all outstanding FERs for written assessment.
  • Review and feedback on Course 12 – what did you enjoy or what could be improved?
  • Complete any unfinished assessment work.
  • Sign post-assessment agreements.
